Playa hosts Baja guest chefs for three weeks in September

John Sedlar of Playa is hosting a Baja Chef Series over three consecutive weeks, starting Sunday, Sept. 16, with Sabina Banderas, the owner of La Guerrerense, the celebrated seafood street stand. Other chefs include Benito Molina of Manzanilla restaurant and Guillermo “Oso†Campos Moreno of Tacos Kokopelli. Menus will be offered along with Sedlar’s new rooftop-garden-inspired menu. Playa bar director Julian Cox will create collaborative cocktails.

La Guerrerrense, Sunday, Sept. 16, to Tuesday, Sept. 18. Banderas’ seafood stand has been in business for 51 years and is regarded as one of the top street stands in the world, unique for her salsas of dried chiles, oil and nuts. Banderas is known for her tostadas of sea urchin, sea cucumber and sea snails topped with vegetables and complex seasonings and sauces. Her daughter, Mariana, on weekends prepares seafood cocktails, raw clams and oysters. Menu items to include: Sea urchin with Pismo clams and sea snails, and seafood cocktail with chilitos de mi gardin salsa.

Manzanilla, Sunday, Sept. 23 to Tuesday, Sept. 25. Benito Molina’s Ensenada restaurant Manzanilla has what has been described as a “bordello by the sea vibe†and is known as a gathering spot for the food and wine industry. The menu reflects influences from both his hometown of Mexico City and his world travels -- bringing together the cutting edge and the best of Baja flavors. Menu items to be announced.

Tacos Kokopelli, Sunday, Sept. 30, to Tuesday, Oct. 2. Chef Guillermo “Oso†Campos Moreno opened Tacos Kokopelli in January with his brother Pablo Campos and Orlando “Cricket†Miguel de Monte. (It’s named after the Hopi god of fertility and mischief.) Oso has worked in restaurants throughout Mexico, including the Parque Bicentario in Guanajuato, and the Michelin-three-starred Oud Sluis in the Netherlands. Menu items to include: ceviche of halibut with sour cactus fruit and queso panela with oja santa, tomatillo sauce and chapulines (that’s crickets, folks).

Menu items will be available a la carte, priced at $5 to $18.
