About Food Recipe

Serves 8-10.

Best prepared several hours in advance or the night before.

3 cucumbers, peeled, seeded and cut into large chunks

3 cloves of garlic, peeled

2 cups chicken stock

32 ounce container of plain yogurt (We like Trader Joe’s Greek style)

3 bell peppers finely diced (red, yellow and green)

1 red onion, finely diced and then soaked in a bowl of cold water for at least 30 minutes. Drain and pat dry.

1 cup mixed, red and green grapes, cut in half lengthwise

½ cup heavy cream

3 tablespoons white wine vinegar

2 teaspoons salt

2 teaspoons white pepper

cilantro to garnish

1. Process cucumbers, garlic and stock in a blender until smooth. Transfer to a large bowl.

2. Stir in remaining ingredients. Combine well. Chill several hours or overnight.

3. Garnish with a sprig of cilantro.
