Mint ginger beer

This mint ginger beer is one of the best fake cocktails around. It’s basically a sober Moscow mule, with a sprig of mint in place of the missing vodka.
To make the ginger syrup, combine 4 parts fresh ginger juice to 3 parts sugar, and stir until dissolved.

In a cocktail shaker, combine the lime juice, simple syrup and ginger syrup with a small ice block, and shake to combine. Strain into a Tom Collins glass with a large spear of ice. Top with soda and garnish with the mint sprig, ginger and lime.
