Talk about a lucky eight. Tucked away on the third floor of the Cosmopolitan Las Vegas, behind a glass door emblazoned with the letter é, are eight – count ’em, eight – seats for some of the most fortunate foodies in town. This is where renowned chef José Andrés, known for his vast, multifaceted Bazaar by José Andrés restaurant in Beverly Hills’ SLS Hotel, is giving new meaning to the word “exclusive.â€
In the private space, diners fortunate enough to land a reservation sit around a curved counter and enjoy a “secret†18 to 23 course tasting menu of Spanish-influenced cuisine.
“From the moment you sit down, you have signed up for a culinary journey. Guests are facing the chefs and can watch how they assemble and carefully prepare the dishes,†owner José Andrés told the Las Vegas Guide. “It is like watching an artist paint a canvas. It is better than any other show in town, a culinary experience that excites all your senses.â€
The fare at é varies from day to day, though Andrés said he tries to keep two-thirds of the menu savory and the remaining third sweet. Past menu items have included liquid nitrogen gin and tonic; Andres’ take on the cold Spanish soup, ajo blanco; rosemary wild mushrooms in parchment; and 25-second bizcocho — a special cake Andrés zaps in the microwave for 25 seconds.
This season, Andrés will be adding some truffles to the mix. “We glaze whole lamb shanks in their own juice and finish them with shaved truffles. We also have a squash meringue: a sandwich filled with cream, hazelnuts and white truffle between two squash meringues.â€
é is open from Wednesday through Sunday, with seatings at 5:30 and 8:30 p.m. Guests can book up to three months in advance and reservations are only accepted through email at [email protected]. The cost is $195 per person.
