Kid Flips for Eggs With Tofu
An idea for kids: My toddler likes scrambled eggs for any meal. I fix them for dinner at least once a week and add tofu for an extra punch of protein. Take one slice of regular tofu; pat it dry with a paper towel. Mash it in a bowl with a fork; add one egg, some milk and beat. Heat some butter in a skillet and pour in tofu-egg mixture. Add grated cheese and cook to desired consistency.
I put the cooked eggs on wheat toast, top them with paprika for color and cut the bread into squares. For a side dish, anything quick will do, such as steamed mixed veggies (I buy them frozen--they keep a long time and only take a few minutes to cook). Add slices of fruit and you have a quick, colorful, healthful meal.
