Licking Storage Problems
Question: What’s the best way to store ice cream in the freezer?
Answer: In a side-by-side refrigerator-freezer, keep ice cream as close to the bottom as possible, because heat rises to the top. If your freezer compartment is on the top or bottom, it doesn’t matter where you put the container. Rule of thumb: Store ice cream away from the door; otherwise it will melt and refreeze when the door is opened and closed, harming the texture and flavor.
To protect the ice cream after you have scooped some out of the container, put plastic wrap on its surface to help preserve its appearance and texture.

Q: How long can you keep ice cream in the freezer?
A: In a typical deep freezer, which holds temperatures at minus 10 to minus 15 degrees, ice cream may keep for months without freezer burn. However, most refrigerator freezers cool only to between zero and 5 degrees, so it is best to consume ice cream stored in those within seven days.

Q: When I purchase ice cream, should the bagger put my ice cream in a plastic bag?
A: Plastic breathes and will allow the cold to escape. A double-lined paper bag will protect your ice cream better.

Q: What’s the best temperature for serving ice cream?
A: A little warmer than refrigerator freezer temperatures. For the best flavor, let ice cream sit for five to 10 minutes after you take it out of the freezer.
