Many stores sell plastic-wrapped cactus that has been dethorned and sliced. Some cooks, however, prefer to remove the thorns themselves to ensure they’re getting the freshest possible paddles. When shopping for nopales, or cactus paddles, look for firm, unwrinkled bright green paddles. Avoid dark green paddles or those with dry skin.
If you buy cactus paddles with large thorns--these are rarely sold in markets--put on thick gloves, grasp the cactus paddle at one end or anchor it with a fork and use pliers to remove any large needles.
Most cactus paddles sold in markets have the larger thorns removed. The small, irregular bumps that remain, however, conceal almost invisible thorns that need to be trimmed off.
