A Bittersweet Dish on Dutch Menu

A Dutch restaurant is turning the culinary clock back to the time of the Nazi occupation by serving tulip bulb soup.

Chef Rob Pauv at the Igesz restaurant in this northwestern city is keeping the recipe under his hat, but he said Friday that employees at the restaurant who have tasted the dish say it’s delicious.

During the “Hunger Winter” of 1944, the German occupiers stripped the nation of foodstuffs to send to Germany.

The starving Dutch dug up and cooked bitter tulip bulbs from their gardens to stay alive.
