Eye-Opener for Dear Old Dad : Steak ‘N’ Eggs Gets Father’s Day Off to a Good Start

Start Dad’s special day off right this Sunday with a breakfast of Steak ‘N’ Eggs. The eggs are seasoned with garlic, oregano and Parmesan cheese and accompanied by New York strip steaks, grilled over coals, then thinly sliced. Serve with fresh fruit, muffins and a Happy Father’s Day greeting.
STEAK ‘N’ EGGS
2 (10-ounce) New York strip steaks
8 eggs
1/2 cup milk
1/4 cup grated Parmesan cheese
2 teaspoons dried oregano leaves
1 teaspoon salt
Dash pepper
1/2 teaspoon granulated garlic
2 tablespoons butter
Grill steaks 4 inches from medium-hot coals 10 to 12 minutes per side for rare or until desired doneness. Remove steak to cutting board.
Combine eggs, milk, Parmesan, oregano, salt, pepper and garlic in small bowl. Heat butter in skillet over medium heat until hot. Pour egg mixture into skillet. As mixture begins to set at bottom and side, gently lift cooked portions with spatula so thin, uncooked portion can flow to bottom. Avoid constant stirring.
Cook until eggs are thickened throughout but still moist, about 3 to 5 minutes. Cut steak diagonally into thin slices. Makes 4 servings.
