My Best Recipe : A Tasty Mushroom Surprise for Meat Loaf Lovers

“I have a meat loaf lover in my family and I get a bit tired of the same old thing,” Rita Wright writes, “so I tried this one night and not only did my meat loaf lover love it, but so did I.”
MUSHROOM-STUFFED MEAT LOAF
1 1/2 pounds ground beef
2 eggs
1/2 cup milk
3/4 cup soft bread crumbs
2 teaspoons salt
1 teaspoon ground oregano
1 tablespoon Worcestershire sauce
1 tablespoon Dijon-style mustard
Mushroom Filling
Combine ground beef, eggs, milk, bread crumbs, salt, oregano, Worcestershire and Dijon mustard in large bowl. Mix thoroughly. Place half of meat mixture in 9-inch loaf pan.
Make trough down center. Spoon in Mushroom Filling, then pat rest of meat over filling, sealing sides and making top smooth. Bake at 350 degrees 1 hour. Let stand about 10 minutes before slicing. Makes 6 to 8 servings.
Mushroom Filling
2 tablespoons butter
1 cup sliced mushrooms
1/2 cup chopped onion
1/2 cup sour cream
Melt butter in skillet. Saute mushrooms and onion until tender. Cool. Stir in sour cream.
