Manresa’s David Kinch comes south to cook at Rustic Canyon
Manresa’s David Kinch is one of the most celebrated chefs in California, but unless you’ve found a reason to be in the little town of Los Gatos, outside of San Jose, you’ve probably never had a chance to taste his food.
Now, thanks to Rustic Canyon’s Jeremy Fox, you can fix that. Kinch, with the help of Fox and his crew, will be cooking recipes from the just-published “Manresa†cookbook. The dinner will be Monday, Nov. 11, at Rustic Canyon Wine Bar & Seasonal Kitchen. Tickets are $95 per person.
In an interesting twist, each of the four courses from the book will be accompanied by a dish from Fox & Co. that they believe will complement Kinch’s. Manresa pastry chef Stephanie Prida will be coming down to fix the fifth course, dessert.
Fox worked for Kinch at Manresa for six years, including two years as chef de cuisine, before striking out on his own to open Ubuntu in the Napa Valley, where he earned national attention for vegetarian cooking. He credits Kinch as one of his most important mentors. He joined Rustic Canyon in February.
Manresa has been awarded two Michelin stars for six years straight. It’s been named among the country’s best restaurants by publications as varied as Restaurants & Institutions and Gourmet.
Kinch graduated from Johnson & Wales and cooked in Asia and Europe before landing in California at Sent Sovi in Saratoga in 1995. He opened Manresa in Los Gatos, in the foothills above the Silicon Valley, in 2002.
